Couscous Couscous

Couscous

Couscous (kuskusu in Arabic) is coarsely grained semolina pasta. The grain is a staple in many North African countries like Morocco, Tunisia, Algeria, and Libya. It is probably Berber in origin. Over the past decade, it has become more popular in North American menus & dinner table.

Couscous is traditionally served with meat or vegetable stew. When I was travelling through Morocco, I practically had it every day. Sometimes with chicken tagine, sometimes with kefta (meatballs). Like rice or pasta, couscous does not have a lot of taste, but when eaten with a dish with a thick sauce, mmmm.
