Palm Sugar
Palm sugar comes from the sap of the coconut palm or in some cases from sugar-cane. It has a rich caramel-like flavor. In India, palm sugar coming from sugar-cane is referred to as jaggery and those coming from coconut palm is gur. In Thailand, it is sold in these flying saucer-like disks as shown in this photo.
