Rice—The Asian Staple Food
If there is anything that identifies as asian food, it is rice. Rice is a staple food of more than 50% of the world’s population. Particularly in Asia, that would be closer to 100%.
In the Philippines for example, you have fried rice for breakfast (with something else of course), you have rice with lunch, and you have more rice for dinner.
In China, they have a saying
A meal without rice is like a beautiful girl with only one eye.
I completely agree. You have to have rice.
There are different types of rice, about 7,000+ varieties in fact. The most well known rice grains are as follows:
- BASMATI rice originated in Bangladesh and India. It has a firmer and drier texture than other types of rice and therefore stands up well to spicy curries.
- JASMINE rice is usually what is served with asian food. It is also known as Thai rice. It is soft to the palate and a little bit sticky.
- ARBORIO rice is an Italian rice that absorbs a lot of liquid but still retains its shape. It has a creamy texture; perfect for risotto.
- BROWN rice has a tan like color which comes from its’ high-fiber bran coating. It has a nut-like flavor, chewy and firm like basmati rice.
- SUSHI rice is commonly used for sushi in Japan. It is sticky and moist and therefore ideal if one is using chopsticks.
